    15 bean soup mix
    8 cups chicken stock or broth - prefer low sodium
    1 lb pork chop meat cut in cubes
    1 bay leaf
    1 fresh or dried chili
    1 large onion, chopped
    4 cloves garlic
    4 whole fresh tomatoes - skinned
    1 medium carrot, sliced and chopped
    1 rib celery with leaves, sliced
    2 medium potatoes scrubbed and finely diced
    4 ounces fresh green beans
    3 teaspoons Worcestershire sauce
    2 Tablespoons herbs of your choice


In a large heavy soup pot, soak the beans in stock or water to cover overnight.
The next day add enough of the remaining stock or water to cover the beans by 1 to 2 inches. Add the pork and the bay leaf and the chili pepper. Bring to a boil, then turn down the heat to very low and let simmer, covered, until the beans are tender 1 to 3 hours depending on the type of bean.
Add the reamining ingredients. Simmer, covered, until the vegetables are tender, 20 to 25 minutes.
Take out the the bay leaf and the chili pepper
