    8 cups spaghetti squash
    8 cups ragu spaghetti sauce
    1-1.5 cans organic black beans, drained (or 2 cups cooked dried black beans)
    1 can hunt's diced tomatoes
    2 cups chopped fresh mushrooms
    1 medium onion, diced
    1 tbsp olive oil


cut spaghetti squash in half, scoop out the "guts" and then spray each cut side with olive oil. bake at 350 for 30 minutes, cut side down. scrap out the squash with a fork and set aside.

while the squash bakes, saute the onions and mushrooms in 1 tbsp olive oil. add the diced tomatoes and cook for a couple more minutes. add the black beans (if using dried beans, make sure you cook them before adding them) and spaghetti sauce and simmer for 10 minutes.

pour sauce and bean mixture over spaghetti squash and serve.
