    2 lb potatoes (6-8) peeled and quartered
    1/4 cup chopped onion
    salt and pepper
    2 tsp olive oil
    1 cup chopped lean ham
    1 cup low fat cheddar cheese (shredded)


Good for Breakfast with fruit or for dinner with a salad.

Set oven at 400 degrees
Cover potatoes with cold water and bring to a boil. Do not boil, but rinse and drain. When cool enough to touch, grate the potatoes. Transfer to bowl and toss with onion.
Spray 10" pie plate with Pam and then coat with one tsp oil. Add 1/2 of potatoes. Top with Ham and Cheese. Spread the remaning potatoes on top and brush with the remaining olive oil.
Bake for 30-40 minutes until brown on top and bottom. Remove from oven and let set for a few minutes before cutting into wedges and serving.
