    Egg substitute, liquid (Egg Beaters), 1/4 cup
    Cinnamon, ground,1/2 tsp
    Nutmeg, ground,1/4 tsp
    Banana, fresh, 1 medium
    Carbquick - Low Carb Baking Mix 1.50 cup
    baking powder, 1.5 tbsp
    Calorie Countdown 2% Milk, 4 oz
    Chopped Walnuts, 1/8 cup
    applesauce (unsweetened),1/3 cup
    Ideal No Calorie Sweetener, 1/2 cup


Can Freeze in individual bags.


Chop nuts and set aside. Mix dry ingredients in a large bowl. In a sep. bowl mash banana and add wet ingredients and mix with a fork well. Combine two bowls and mix with a fork. Stir in nuts. Spoon into pre-greased (with vegetable oil spray) mini muffin pans and bake at 375 about 10-12 minutes or until the spring back when touched.

Cool 5-10 minutes on a rack then turn out.

Serving Size: 1 mini muffin
