    * Spinach, fresh, 1 package (10 oz)
    *Sorrento Part-Skim Ricotta Cheese, 16 oz
    * 1 can Artichoke Hearts, coarsely chopped
    * Garlic, 3 cloves
    * Parmesan Style topping, reduced-fat, 1/2 cup
    * Olive Oil, Extra Virgin, 1 tbs
    Mozzarella cheese, 2% milk reduced-fat, 4 oz
    * *Flour, white, 1.25 cup
    * Flour, whole grain, 1.25 cup
    * Yeast, bakers, 1 ounce
    * Water, tap, .5 cup (8 fl oz)
    * *Canola Oil, 2 tbsp
    salt and pepper to taste


Mix white flour with yeast in a large bowl, add warm (120 degree) water and canola oil. Mix on low with hand mixer for 30 seconds, scraping sides of bowl constantly. Switch to mixing on high for three minutes. Add wheat flour and mix together by hand until mixed thoroughly and stretchy. Cover and set in a warm place for 20 minutes.

Saute spinach with garlic and olive oil until spinach is wilted. Chop up artichoke hearts to large pieces and add to pan. Mix together, add to large bowl. Add Parmesan cheese, ricotta cheese, 1/4 T. salt and 1/4 T. pepper.

Separate dough into 8 equal balls. Roll out dough on a lightly greased surface until you have about an 8" dia. circle. Put a handful of mozzarella cheese on dough and 2-3 tablespoons of filling. Fold dough over, pinch edges. Bake at 425 degrees for 15 minutes. Serve with warm marinara sauce. Makes 8 servings.
