Introduction

Ingredients

    3 chicken breasts
    1 lb pepper jack cheese (7.5 oz package works well as this is the only size we can find here in NC)
    1-2 jalapenos (2 small 2 inch or 1 large 3-4 inch size)
    1 small onion diced
    3 TBS minced garlic
    1 can cream of chicken soup
    1 cup sour cream
    1/2 (6 oz) bag Nacho Cheese Doritos
    2-3 TBS butter.


Tips

Feel free to use more or less of any of the ingredients. This is how we like it. Oh and the jalapenos do not make the dish spicy. The spice is drowned out by the sour cream.


Directions

You can precook the chicken if you like (just boil it). Cut chicken into bite size pieces. Mix chicken, cream of chicken soup, sour cream, garlic, jalapeno, onion. Crush chips and put half of them on bottom of 8x8 or 9x9 baking dish. Put mixture on top of chips. Slice cheese or if presliced place cheese on top of mixture. Bake 20-30 minutes at 350 degrees or until cheese starts to brown. Put rest of chips on top of cheese, drizzle melted butter on top of chips and bake another 10 min. Watch the last 10 min very closely as chips will burn if they are over toasted.
