Introduction

I've been experimenting with tortillas using them for mini pizzas, I thought I could use them for Calzones. I find a recipe using tortillas, so I just came up with something that ended pretty awesome. Number of Servings: 10

Ingredients

    1.5 lbs cooked chicken breast
    1 bag Green Giants Chopped Broccoli
    10 8" Mission low carb tortillas
    1 can Cream of Mushroom, low sodium
    3 oz Parmesan Cheese shredded
    1 tsp Salt
    1 tbl black pepper
    1 tbl nutmeg
    1 tbl garlic powder
    Pam olive oil

Tips

1. You are able to freeze these perfectly. Still spray each side of calzones, you can wrap each one with caran wrap or multiple in a freezer bag.
2. Next time I'm going to do a three cheese using ricotta cheese, or sausage and pepper.... endless options
3. I used to low carb white tortillas, I would of used whole wheat or my love artisan black bean tortilla, but the softness was needed to I could pinch the ends and they would stay closed.
4. I had some filling left over, so I just freezed it for calzones or my mini pizza toppings later.


Directions

1. Microwave your broccoli by directions.
2. In a nonstick pan on medium heat, add cream of mushrooms and spices.
3. Add cheese until melted and mixed in well
4. Add broccoli and chicken.
5. With tortillas, for a 8" place 1/3 cup in center, wet outside edges with water, then half the tortilla in a half moon shape. Make sure the spread the filling, but leave enough so that you can pinch the ends. That way the filling won't bleed out (or at least as much).
6. Spray each calzone back and front with Pam
7. Bake at 350 degrees about 10 - 15 minutes each side, or however you like your crust to be.

Serving Size: 1 calzone per serving
