Number of Servings: 8


    1/2 a bell pepper (any color)
    1/3-1/2 a red onion (though again, could be any color)
    Two handfulls of baby carrots
    1 lb of ground beef (turkey works well, too)
    1/3 cup of italian style bread crumbs
    2 T minced garlic
    2 eggs, beaten
    A dash of salt
    Ground black pepper (to taste)
    2 t Italian seasoning

    About 3T ketchup
    About 2t yellow mustard
    About 1.5 T honey


I recommend that you make this the night before you plan to serve it. Meatloaf is always better the next day. If you do plan on eating it the same night as cooking it, make sure to let it rest for about 20 minutes before eating.


In a food processor, chop pepper, onion, and carrots. Turn veggies out into a large bowl.
Add ground beef. Break it up a bit with a spoon or fork.
Add bread crumbs, garlic, and spices. Combine but don't over-work.
Add eggs and blend to coat.
Put meatloaf mixture into a loaf pan (may want to line or grease the pan).
Bake at 325 for about an hour.
Mix the condiments, and spread on top of the loaf. Bake for remaining 20 minutes.

Serving Size: Makes about 8 one-inch slices
