    5 tsp tarragon vinegar
    1.5 tsp lemon juice
    1/4 tsp salt
    Dash pepper
    8 oz cooked & peeled potatoes, diced
    2 hard cooked eggs, chopped
    2 oz light swiss cheese, cubed
    4 tsp light mayo
    1 tsp chopped fresh parsley


In bowl combine vinegar, lemon juice, salt and pepper. Add potatoes; toss and refrigerate 1 hour. Add eggs, cheese, mayo, and parsley to potato mixture; toss to combine. Chill again before serving.
