Ingredients

    Baking Mix
    2.5 cups 100% whole white wheat flour
    2 Tbs baking powder
    1 Tbs sugar
    1/2 tsp salt
    1 stick butter, very cold or frozen

    For Pancakes
    1 cup baking mix
    1 egg
    1/2 cup milk (for thinner pancakes, add more milk)

Directions

Mix four, baking soda, sugar, and salt in a medium bowl. Use a pastry blender/two knives to cut butter into flour until it resembles coarse crumbs. Or, use a cheese grater to grate frozen butter into flour. It works best if you grate directly into the flour and stir it up a bit as you go. The goal is to get little bits of butter mixed throughout the flour.

Mix can be stored in a plastic bag in the fridge until the expiration date on the butter, or in the freezer pretty much indefinitely.

To make pancakes:
Combine 1 cup of mix with 1 egg and 1/2 cup (plus some) of milk until moist. Pour into pan and cook until edges are dry; flip and continue cooking another minute or so until cooked through. Each cup makes enough pancakes for about 2 people (4-6 pancakes, depending on the size). Nutrition information assumes each cup makes 6 pancakes.

Serving Size: Makes 3 cups of mix; approximately 18 pancakes
