    3 Sweet Potatoes
    1 can kidney beans
    6 cups of kale
    2 tbsp of olive oil
    1 shallot chopped
    1 garlic clove chopped
    few dashes of red pepper flakes
    salt & pepper to taste
    Juice from 1/4 lemon


bake sweet potatoes 45-60 minutes at 400 degrees.

Saute shallot, garlic, rosemary and red pepper flakes in the olive oil. Add kidney beans after about 1 minute. Add kale after 5 minutes. Cook another 5-8 minutes.

Add lemon juice & salt & pepper to taste

Put topping into cut potato
