    1/2 med onion
    1 tsp EV Olive OIl
    1 oz chopped sun dried tomatoes (not in oil)
    1 Tbsp Basil
    1 cup spinach
    1/2 cup eggbeaters
    1 oz Fat Free Feta Cheese


Fry onion in 1 tsp EVOO in nonstick skillet until translucent. Add sun dried tomatoes and cook until warmed through. Add Basil and loosely packed spinach and cook for 2-3 mins more. Sprinkle on feta cheese. Pour in 1/2 cup eggbeaters, beaten. Cook undisturbed for 5 mins, and finish under a hot broiler until the eggs are set (about 3-4mins).
