Introduction

Ingredients

    Butter Beans ("gigantes" in Greek), Large, 3 Cup
    Black-eyed peas, 3 Cup
    Onions, raw, 1.5 medium, grated
    Celery, raw, 4 stalk, grated
    Carrots, raw, 2 medium, small dice
    Garlic, 3 cloves, crushed
    Olive Oil, .5 cup
    Spinach, fresh, 1 cup

Tips

Greeks traditionally finish this dish with a splash of lemon juice. Top with feta cheese or enjoy plain. Best with fresh, crusty bread!


Directions

Soak overnight, boil for 15 minutes, and drain beans if using dried.

Briefly saute onion, carrot, celery, carrot and garlic in olive oil. Add beans, cover with water, and simmer for at least 1.5 hours, or until beans are soft. Finish with spinach.
