A great way to "trick" non-veggie eaters into having loads of veggies! A great way to "trick" non-veggie eaters into having loads of veggies!
Number of Servings: 10


    1 lb ground turkey (or chicken breast) (Sometimes I just use 2 lbs of the veggie "beef" crumbles or tofu)
    1 lb veggie "beef" crumbles
    1 medium onion, diced
    6 cloves minced garlic (can be less, we just love garlic!)
    2 zucchini, sliced
    2 yellow squash, sliced
    1 red bell pepper sliced
    1 whole tomato, sliced
    2 cans Fire-Roasted tomatoes with garlic, basil and oregano
    1 cup tomato sauce
    rosemary, oregano, thyme, and other spices to taste (I just use whatever I have fresh!)
    1 box rotini pasta (I used the "veggie pasta")
    1 cup low-fat mozzarella


The cheese doesn't have to be added. Recipe freezes well.


Preheat oven to 350. Spray pan with non-stick cooking spray, saute onions and garlic, then add meat and brown. Meanwhile, in a food processor combine all vegetables and puree, then add tomato sauce and pour over the meat mixture. Adding any herbs and seasonings. Allow to simmer. Prepare the pasta as directed. When pasta is ready combine pasta and meat/sauce mixture in a casserole dish and top with cheese. Put in oven until cheese is melted, about 10 minutes.
