    2 Tbsp Butter
    1 Lg Vidalia or Myan Sweet Onion Chopped
    2 inches fresh Ginger, peeled and chopped
    6 cloves Garlic chopped/crushed
    4 lg. Carrots, peeled and shredded
    4 cups vegetable boullion
    2 Tbsp. brown sugar
    dash of Nutmeg
    Cream or Sour cream to top


In a soup pot,
Saute onion in butter until onion is soft, (about 5-8 minutes)
Add Ginger and Garlic, cook until fragrent.
Add carrots and mix all together.
Add Vegetable boullion, bring to boil, reduce to simmer. Cook until carrots are soft, about 20 minutes.
Using a stick blender: blend in pot until creamy consistency
Using stand blender: carefully place contents of soup pot into blender, leaving the center out of the blender top, cover blender top with dish towel, puree until smooth consistency. Return soup to pot.
Stir in brown sugar and nutmeg. Heat through.
Ladle into cups or bowls, top with a splash of cream or dollop of sour cream.
