Ingredients

    1/2 Red Onion Chopped
    2 Celery Stalks Chopped
    1 Cup of Carrots Chopped
    2 Garlic Cloves, minced
    2 Medium Sized Italian Tomatoes Chopped
    2 Tsp Kosher Salt
    4 Cups Vegetable Broth
    8 oz Lentils
    1/2 Tsp Cumin
    Dash of Paprika
    1/2 Tsp Coriander
    1/4 Tsp Black Pepper

    Chopped Parsley for serving

Tips

This keeps well in the fridge and can be reheated for about 3 minutes. Great to make in big batches and reheat for lunch.


Directions

1.Chop Onion, Celery, Carrots, Garlic, and Tomatoes.

2. Heat a heavy bottomed pot on high, add Onion, Celery, and Carrots. Cook over medium heat until they start to sizzle.

3. Add garlic and saute until fragrant.

4. Add Tomatoes, salt, lentils, veggie broth, cumin, paprika, coriander, and black pepper. Increase heat to high, cover and bring to a boil.

5. Reduce heat to low and simmer for 45 minutes, or until lentils have softened.
