Ingredients

    3/4 cup long grain rice
    2 burrito sized tortillas
    1 clove garlic, minced
    1 small onion, minced
    1 lb ground turkey
    1 can diced tomatoes, drained
    1 can refried beans
    1 cup cheddar cheese
    1 tsp cumin
    1 tbsp chili powder
    1/4 tsp oregano
    1/4 tsp salt
    1/4 tsp pepper
    1/2 tsp paprika
    pinch cayenne

Directions

Cook rice in rice cooker or as directions say.

Preheat oven to 375.

In a large pan, cook onions, garlic, and turkey over medium-high heat until turkey is browned. Add tomatoes and cook 1 minute more.

In a lightly greased 8x8 pan, layer ingredients as follows: tortilla, beans, rice, salsa, meat mixture, cheese. Repeat all layers. Bake for 15 minutes, cut into 9 squares, and serve.
