    5- 5 inch long sweet potatoes
    1TBSP Fennel Seed
    4 Garlic Cloves
    1TSP of Kosher Salt
    1TSP of Black Pepper
    1 TBSP of Extra Virgin Olive Oil.

    Bake in oven at 350 degrees.


Play with all ingredients and adjust to your personally seasoning level. I also like to do a combo of sweet potatoes, yams and russet potatoes to change it up.


Peel and cut potatoes into large cubes. Size is preference.

Chop Fennel Seed. Fennel Seed is a bit hard so I just basically take my knife and put my weight into the seed and let them break up.

Mince garlic with garlic press

In a large zip lock bag mix together sweet potatoes, fennel seed, minced garlic, salt & Pepper and Olive Oil. Mix well and place on a baking sheet in the oven for 45-60 minutes depending on how soft you like the potatoes to be.
