A great one skillet meal that takes less than 20 minutes to make. A great one skillet meal that takes less than 20 minutes to make.

    8 oz boneless skinless chicken breast cut into bite sized pieces
    3 tbs extra virgin olive oil
    1 1/2 tsp old bay seasoning
    3 cloves minced garlic
    1 cup frozen chopped spinach
    1 can petite diced tomatoes
    1 tsp lemon juice


Sautee the chicken in olive oil over medium heat just until it begins to turn white. Add in the old bay and minced garlic. Continue to cook until the chicken is no longer pink. Stir in the spinach and the can of tomatoes. Cook for approx. 7-10 minutes or until spinach is thawed and vegetables are heated through. Stir in lemon juice just before serving. This is great with pasta or rice.
