    8 oz. Giant Brand Ground Beef 96% Fat Free
    1 medium onion / 1 cup chopped onion
    1 26 oz. jar Nature's Promise Organic Tomato Basil Pasta Sauce, divided
    1 Tbsp. ground Oregano
    .25 Tbsp. Basil
    4 tsp. King Arthur Whole Wheat Flour
    1 cup (not packed) Breakstone's Fat Free Cottage Cheese
    1 package Kraft Fat Free Mozzarella Cheese (7 oz.? -- 8 oz. used for nutrition calculation)
    1 large fresh egg
    6 Tbsp. Giant Brand Finely Shredded Parmesan Cheese
    5 medium Zucchini


The amount of mozzarella and parmesan cheese on top could easily be reduced to reduce calories. As is, it is very, very cheesy (like a pizza with extra cheese).


1. Peel and slice 5 medium zucchini into long thin strips (like pasta).
2. Place zucchini strips on paper towels. Sprinkle salt on zucchini, and set aside, allowing zucchini to sweat.
3. In a skillet, brown 8 oz. ground beef over medium heat and drain; add chopped onion and continue cooking.
4. Stir in 2 cups tomato basil pasta sauce, 1 Tbsp. oregano, and .25 Tbsp. basil. Bring to a boil.
5. Reduce heat and simmer uncovered for 10 minutes, stirring occasionally.
6. Grease (spray Pam) an oblong baking dish.
7. Using paper towels, remove excess liquid (and some salt) from zucchini (by blotting and wiping).
8. Line baking dish bottom with a layer of zucchini slices.
9. Sprinkle zucchini with whole wheat flour.
10. In a bowl, combine cottage cheese and egg; mix well.
11. Spread cottage cheese/egg mixture over zucchini.
12. Spread meat/tomato basil pasta sauce mixture.
13. Add another layer of sliced zucchini.
14. Spread remainder of jar (10 oz.) of tomato basil pasta sauce on top of zucchini.
15. Top with package of mozzarella cheese.
16. Sprinkle 6 Tbsp. parmesan cheese.
17. Sprinkle oregano (generously) on top of cheese.
18. Bake uncovered at 375 degrees for 40 minutes.
19. Let stand 5-10 minutes before serving.
