Number of Servings: 16


    2 cups flour
    2 large eggs
    1 stick blue bonnet light margerine (very soft)
    8 oz light sour cream
    1 cup splenda (1/2 splenda 1/2 sugar)
    1 tsp vanilla extract
    1 tsp baking powder
    1 tsp baking soda
    10 oz frozen unsweetened blueberries thawed in juice
    13x9 baking pan - prepared with cooking spray
    Powdwer sugar if desired.


This can also be made in a bunt pan or cake pan with a whole in middle. Either way it is moist and so yummy


oven on 350
cream margarine, eggs, sour cream and and sugar large bowl with a hand mixer. Might still be a little lumpy but that is ok. Add vanilla and blend well. Add baking powder and baking soda, mix very well with a scrapper or wooden spoon stir in flour. Mix will be thick and kind of loose dough. fold in blueberries with juice . Scrap into prepared baking dish. Make sure you spread it out evenly. Bale 35 to 45 mins check to see if center is cooked. remove from oven and sprinkle with powder sugar if desired.
