    500g Ground Beef
    3 slices streaky bacon chopped
    1 large onion finely chopped
    A few handfulls of chopped Spinach
    1 can of chopped tomatoes
    1 cup of red lentils
    100g passata
    2 tbsp tomato puree
    3 cloves garlic
    2 tbsp balsamic vinegar
    1 tsp dried oregano
    1/2 tsp dried thyme
    1 tsp Italian herb mix
    2 tbps chopped fresh parsley
    2 tbps chopped fresh basil
    Salt and black pepper to season


Serve with whole wheat spaghetti, I use durum wheat and garnish with fresh parmeasean. You can go without the bacon but it gives it a more authentic Itialian flavour. Mushrooms would be a good addition.


1. Brown the beef with the onions and bacon in a large skillet. There's no need for any extra oil. When the beef is starting to brown add the garlic and tomato puree and combine well.
2. Once the beef is browned and any liquid has evaporated add the dried herbs, passata, chopped tomatoes and stock followed by the lentils.
3. Bring to just under a boil and simmer, stirring frequently until the lentils have softened. You may need more liquid as the sauce cooks.
4. When the sauce is almost ready add the parsley and spinach, about 3 mins before the end of cooking. Garnish with fresh basil.
