Delicious low carb stew! Delicious low carb stew!
Number of Servings: 6


    3 lbs beef stew meat
    1/8 cup oil
    1/4 reduced sugar ketchup
    1 can (8oz) tomato sauce
    2 TBS minced garlic
    4 small stalks celery, including leaves
    1 cup yellow sweet onion
    2 cups sliced carrots, fresh or frozen
    4 - 5 cups coleslaw mix, or shredded cabbage
    salt, pepper, chili powder, garlic powder


Brown beef stew meat in oil. Add enough water to make a big pot of stew, ketchup, tomato sauce, garlic, and spices. Let cook a while. Like, two hours.

Add vegetables, starting with onion, celery, leaves, and then carrot. Save cabbage/coleslaw until very last, because it will disintegrate if you cook it too long. When you're a few minutes from being done, add it in.

If you want it a little thicker, thicken with xanthan gum or whatever you want.
