    2 Lemons
    1.5 cups Raspberries
    2 tsp Baking Powder
    1 tsp Baking Soda
    1/3 cup Canola Oil
    2 tbsp Vanilla extract
    1/2 cup *Organic All-Purpose White
    8 tbsp Whole Ground Flaxseed Meal
    1 cup Whole Wheat Pastry Flour
    1 Egg
    1 tsp lemon extract
    1/2 cup Granulated Sugar
    8 oz Applesauce


You can add cream cheese on top, but I eat mine for breakfast. I usually individually wrap them and microwave for a minute.


1. Grade skin of lemons and combine with sugar and all dry ingredients.
2. Combine all wet ingredients.
3. Fold wet mixture into dry mixture.
4. Gently fold raspberries
5. Fill muffin pans
6. Bake at 400 for 20 minutes.

Serving Size: 12 muffins
