    4 chicken breasts, cut in halves
    1 c. brown rice
    1 can reduced fat (Campbell's) Cream of Chicken Soup
    2 c. low sodium chicken broth or 3 bouillon cubes added to 2 c. water
    1 cup mushroom pieces
    1 onion, chopped
    1 T dried rosemary
    salt and pepper to taste


Lightly brown chicken, mushrooms, peppers, and onions in a no-stick saute pan. Place rice, and veggies in a Pam-sprayed 8 x12-inch baking dish. Mix broth with cream of chicken soup and pour over rice/veggies. Sprinkle with half the rosemary Lay chicken breasts on top. Sprinkle with remaining rosemary. Cover with aluminum foil and bake at 350 degrees for 1 hour.
