    1 medium tomato, chopped
    Bacon Bits, 8 tbsp
    Mushrooms, 6 oz., sliced
    12 Eggs
    Sour Cream,1/3 cup
    Cheddar Cheese, 1 cup, shredded
    Mozzarella Cheese, 1 cup


Preheat oven to 325.

Reserve 2 T. each onions and tomatoes. Use 1T butter to saute onions and mushrooms in a skillet. Add bacon bits and tomato and set aside.

Beat eggs and sour cream until well blended. Pour into greased 9X9 baking dish. Top with bacon mixture and cheeses.

Bake one hour or until center is set. Top with reserved onions and tomatoes.
