Introduction

Best with hummus and pita bread. Best with hummus and pita bread.
Number of Servings: 12

Ingredients

    1c whole wheat couscous
    1.5c water

    2c finely chopped fresh parsley
    1/8 c (2Tb) fresh chopped mint leaves
    zest and juice of 1 lemon
    1 medium plum tomato, chopped

Tips

It took me most of the time to clean and cut the parsley.
May also add chopped cucumber and red onion if desired.


Directions

Add 1.5c boiling water to
1c whole wheat couscous, stir and cover. Put aside and chill once water is absorbed. (This yeilded 4c once done)
Clean and spin or shake dry parsley leaves. Cut small with scissors, discarding stems. Do the same with a few mint leaves.
Mix into cooled couscous.
Zest and juice one lemon and add to greens and couscous.
Chop and add tomato.



Serving Size: makes 12 1/2-c servings
