Number of Servings: 6


    2 packages (8 links) Al Fresco Chicken Sausage (I use the Sweet Apple one)
    7 red potatoes
    3 medium sweet red bell peppers
    1 large Vidalia onion
    1 tbsp Extra Virgin Olive Oil
    Salt and Pepper to taste
    Cooking spray


Cut potatoes into bite-size pieces. Boil until firm, but able to be pierced with fork. Drain and season with salt and pepper.

Cut peppers and onion into slices. Spray frying pan with cooking spray and add slices in. Add oil and toss. Cook until softened. Slice up sausage and add to pan to heat through. Toss in potatoes and season, if necessary.

If you find you need more moisture, spray with cooking spray as needed. Makes 6-8 servings.
