I adapted this recipe to make it meatless. I adapted this recipe to make it meatless.
Number of Servings: 6


    1 T olive oil
    2 cloves garlic, minced
    2 cans black beans, rinsed and drained
    1 can tomtoes with juice
    1 1/2 c frozen corn kernels
    1 c instant brown rice
    Taco seasoning mix
    2 cups water
    Juice of a lime
    1/2 c. Shredded cheddar cheese


Saute the garlic in olive oil. Add the beans, tomatoes, corn, rice, taco seasoning and water. Stir together and bring to a boil. Reduce heat and simmer uncovered till water is absorbed. Add juice from a lime, stir in and remove from heat. Top with cheese.
