Ingredients

    2 tsp Olive Oil
    1 package Portabella Mushrooms, cleaned and sliced
    3 Chicken Breasts
    1 tsp minced garlic
    1/2 tsp dried thyme
    1 bay leaf
    5 tbsp Marsala wine
    1/3 cup Chicken Broth
    3 tbsp Fat Free Half & Half
    1/4 cup Mushroom Alfredo Sauce

Directions

Slice chicken breasts into smaller pieces to reduce cooking time. Heat olive oil in a large pan. Add chicken, seasoning with salt&pepper to taste. Cook chicken 3-5 minutes on each side. Remove from pan. Add sliced mushrooms, seasoning with salt and pepper to taste. Cook mushrooms 3 minutes. Add garlic, thyme and bay leaf and cook 30 sec. Add chicken broth and 4 tbsp Marsala wine, and chicken breasts. Reduce heat and cover, simmer 25 min turning chicken 1 time until thoroughly cooked. Add 1 tbsp wine, half & half, and alfredo sauce, and bring to boil. Discard bay leaf. Serve over mashed potatoes or noodles.
