    1 32 oz container of egg whites
    1.5 cups spinach chopped
    1 cup onion chopped
    1 cup mushrooms chopped
    2 large eggs


Preheat oven to 350 degrees

1. Chop the spinach, mushrooms, and onions into small pieces.
2. In a large bowl, mix the egg whites with the 2 large eggs and beat.
3. Spray cooking spray into muffin tins.
4. Evenly distribute all chopped ingredients into 18 cups.
5. Pour the egg mixture into each cup evenly.

Bake at 350 for 20 minutes.

Serving Size: Makes 18 egg cups
