This is a deep dish pie with only a top crust. This is a deep dish pie with only a top crust.

    2 Tbsp. Olive Oil
    1 Cup Onion, chopped
    3 Medium Potato, chopped in small pieces
    2- 2.5 cups cooked chicken, cubed or shredded
    1/2 tsp. poultry seasoning
    1/4 tsp. black pepper
    1/3 cup flour
    1 1/2 cups chicken broth
    1 cup skim milk
    1 bag of frozen mixed vegetables
    1 frozen pie crust


I use Bell's seasoning as my poultry seasoning. It adds a great taste. You can also use fresh veggie and make your own crust, but for time saving purposes, I use the frozen. This recipe is also great to make up into smaller sizes and freeze for a quick dinner another time.


Cook chicken (or used prior cooked chicken). Cube or shred chicken. In a large sauce pan or small stock pot cook onion and potatoes in olive oil until onions are clear and potatoes are tender. Combine dry ingredients and stir into onion and potatoes, coating. Add chicken broth and milk and mix together. Simmer on a low heat to create a thick rue. When the rue is thick enough add chicken and frozen vegetables and simmer for 3-5 minutes. Pour into a pan of your choice and top with the pie crust.
Bake on 425 for 30-40 minutes. Let sit for 10 minutes, cut and serve.
