Stacy's Chicken Pot Pie

2 Tbsp. Olive Oil
1 Cup Onion, chopped
3 Medium Potato, chopped in small pieces
2- 2.5 cups cooked chicken, cubed or shredded
1/2 tsp. poultry seasoning
1/4 tsp. black pepper
1/3 cup flour
1 1/2 cups chicken broth
1 cup skim milk
1 bag of frozen mixed vegetables
1 frozen pie crust
I use Bell's seasoning as my poultry seasoning. It adds a great taste. You can also use fresh veggie and make your own crust, but for time saving purposes, I use the frozen. This recipe is also great to make up into smaller sizes and freeze for a quick dinner another time.
Bake on 425 for 30-40 minutes. Let sit for 10 minutes, cut and serve.
