This is a super tasty, easy, lo-carb and high protein dinner that takes no time from pan to belly! This is a super tasty, easy, lo-carb and high protein dinner that takes no time from pan to belly!
Number of Servings: 1


    Chicken breast (chopped into bite sized pieces)
    Bok Choy (cut up the crunchy part and tender part separately)
    White or yellow onion. Whatever onion you have.
    Broccoli (fresh preferred)
    Sesame oil
    Sesame seeds
    Roasted Soynuts
    Ginger (Fresh or ground)
    Whatever other veggie you want!


Fresh broccoli always seems to work best to me, but frozen will always suffice in a stirfry. If using frozen, add it in earlier in the process so it's cooked all the way through! If you don't have soynuts or sesame seeds try adding peanuts or cashews for a salty crunch. Both are still high in protein!


Sautee chicken breast in 1/2 Tbsp of sesame oil. When it's halfway cooked add in the chopped onion, broccoli, and the crunch part of the boy choy. At some point, drizzle the other 1/2 Tbsp of sesame oil on the chicken and veggies, add the sesame seeds and soynuts (for an added crunch!) and cook until desired texture is reached and chicken is cooked through. Add ginger, ground or fresh, to taste. Add the tender part of the bok choy the last minute or so, just long enough to mix in with the flavors.
