    Egg whites 1/2 cup
    Almond oil 3 tbsp
    Sweetzfree 15 drops
    Molasses ľ cup
    Milk 1 cup
    Cake Flour 1 1/2 cup
    Baking powder 1 1/2 tsp
    Baking soda 1 tsp
    Wheat bran 1 cup
    Oat bran 1/2 cup
    Raisins Ĺ cup


If you can't find Sweetzfree, use Splenda 2/3 cup, or any heat-stable sweetener.


Serving Size:†Makes 12 muffins or 30 mini-muffins.

Preheat oven to 400. Prepare muffin cups.

Beat egg whites. Add Sweetzfree, oil and molasses, and beat well. Add milk and then brans and mix. In small bowl combine flour, baking powder and soda. Add to wet mix and stir gently until itís all wet. Add raisins and stir gently. Spoon into muffin cups (for mini-muffins use 1" ice-cream scoop) and bake for 18-20 min. Cool on rack.
