    2 tsp. ground ginger
    1 tsp. paprika
    1/2 tsp. ground red pepper
    1/2 tsp. allspice
    1/2 tsp. salt
    1/2 tsp. pepper
    10 chicken thighs
    2 tbsp. canola oil
    2 large onions, chopped
    1 tbsp. minced garlic
    3/4 cup chicken broth
    1 8-oz. can tomato sauce


Great served with Cumin Black Beans and Rice


Remove skin from chicken. Combine dry ingredients in a bowl. Add chicken and toss to coat. Cover and refrigerate for one hour.

Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned. Transfer chicken to a plate. Add onions and cook, stirring, until translucent. Add garlic and cook another 30 seconds. Add chicken broth and tomato sauce. Return chicken to the skillet. Bring to a boil, reduce heat, and simmer, covered, for 30 minutes.

Transfer chicken to a platter. Season sauce to taste, and pour over chicken.
