    1/2 c finely diced carrots, 2 stalks finely diced celery, 1/2 finely diced onion, 1 minced garlic clove, 1 med. diced tomato, 1 t olive oil, 1 c diced kale, 1 c diced spinach, 1/2 t sea salt, 1/2 t pepper, 32 oz. 99% fat free chicken broth, 2 c water, 1 lb of dried lentils.


Cook onion, carrots, celery and garlic in olive oil until soft. Add chicken broth, kale, spinach, tomatoes, salt and pepper. Heat through on medium heat. Add water and lentils. Cook for about 25 minutes on medium heat.

Serving Size: Makes about 8 1-cup servings
