Ingredients

    1 Onion
    1 Medium Sweet Potato (optional)
    1 Small Butternut Squash
    Curry: S&B Golden Curry Sauce Mix, Medium Hot,
    Johnsonville Ground Hot Italian Sausage 8 oz (optional)
    Cauliflower, frozen, 1 bag
    Baby Carrots, 2 cups
    Minced Garlic, 2 heaping T.
    Spices to taste
    3 c. water (more or less depending on thickness you like)

Tips

You can always make this healthier or richer. Eliminate meat for vegetarian option, add greek yogurt or half and half for a creamier texture. I've also added more water for a brothier soup or even let a lot of the water cook out and served on quinoa or rice. Enjoy.


Directions

Dice squash, potato, cauliflower and carrots. Add water and curry cubes and cook on low in crockpot all day. Just before serving, sautee sausage, chopped onions and garlic together in a pan. At the same time, puree crockpot vegetables to consistency you like (I usually leave a bit unblended for chunkiness. Add sautéed ingredients and let flavors blend until ready to serve.
