    Flour, white, 1.25 cup
    Oats 1.25 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Salt, .25 tsp
    Cinnamon, ground, .5 tsp
    Applesauce, unsweetened, 1 cup
    Milk, 2%, .5 cup
    Lemon juice, .5 tbsp
    Brown Sugar, .5 cup, packed
    Olive Oil, 2 tbsp
    Egg, fresh, 1 large
    Blueberries, fresh, .75 cup


In large bowl, combine flour, oats, baking powder, baking soda, salt and cinnamon. Stir well.

In medium bow mix together applesauce, milk, lemon juice, brown sugar, olive oil and an egg (slightly beated)

pour wet into dry ingredients. Mix until moist. Fold in blueberries.

Spray muffin tin and fill muffin cups about 3/4 full

bake at 375 for 15-18 minutes. Cool 10 minutes in pan then move to rack to finish cooling.
