Introduction

Ingredients

    Onions, raw, 1 medium (2-1/2" dia)
    Parsley, dried, 1 tsp
    Mushrooms, fresh, 2 cup, pieces or slices
    Garlic, 1 clove grated
    Thyme, ground, .3 tsp
    Fresh Chives, 1 tsp chopped
    Salt, 1 tsp
    Pepper, black, .5 tsp
    Olive Oil, 1 tbsp
    Earth Balance Natural Buttery Spread, 1 tbsp
    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)

Tips

If the oil is low, add a bit of Pam buttery spray to the mushrooms.


Directions

Preheat oven to 350 degrees.

Place the potatoes in a large pan of salted water and bring to a boil.Simmer for 15 minutes and then drain. Leave until cool enough to handle.

Heat 1/2 tbsp of olive oil to a pan. Add onions. Cook until soft and starting to turn golden at the edges. Season and tip into a bowl.

Coarsely grate the potatoes into the bowl with the onions. Add parsley, and season with salt and pepper.

Mix together using your hands and shape into 4-5 patties and flatten slightly.

Heat the 1 tbsp buttery spread and cook the rosti until golden brown on both sides. Keep warm in the oven.

Heat the remaining 1/2 tbsp of olive oil and saute the onions with the garlic and thyme until tender. Season to taste.
