    2 large zucchini
    2 bell peppers
    1/2 onion
    2 bags boil in bag brown rice
    2 tbsp EVOO
    1/2 cup breadcrumbs
    1/2 cup shredded parm


1. Chop onion and peppers and saute in EVOO.
2. Cook brown rice.
3. Chop zucchini.
4. Mix all of the above into a large glass baking dish.
5. Top with breadcrumbs and cheese and bake at 350 for 30-35 minutes or until zucchini is cooked to your liking.
