Ingredients

    1 cup quinoa
    1 lb edamame
    2 lemons, juices
    2 ripe avocados, sliced thinly
    2 bunches of radishes halved, lengthwise
    1 cup basil
    salt and pepper to taste

Directions

cook quinoa (I use my rice cooker for this)
cook edemame (I buy mine precooked so if you do you can skip this step.
toss the avocados with the lemon juice. Add quinoa, garlic, basil and salt and pepper and toss.
