3/4 cup flour
3/4 cup milk
1/2 tsp. salt
1 tsp vanilla (optional)
2 T. butter
Serve with your favorite syrup or fruit topping. My kids love it served with unsweetened applesauce. You can also add sliced apples to the top before baking. On Valentine's day I add 1/4 cup cocoa and 1/4 cup sugar to batter, and top with sliced strawberries.
Whisk together flour, milk, salt and vanilla until smooth. Whisk in eggs, one at a time.
If you have a microwave proof pie pan, melt 2 T. butter in pie pan (approx 45 seconds). Otherwise, pour 2 T. melted butter in pie pan.
Add flour mixture to pie pan with melted butter (no need to stir).
Bake at 350 for 25 minutes or until mixture is set and starts to rise and lightly brown. (It will shrink again after coming out of the oven.)
