    4 cups cooked, mashed yams
    4 tbs butter
    2 cups potatos cubed and cooked
    1/2 cup thawed frozen peas
    1/2 cup thawed frozen corn
    1 cup Carrots chopped
    1 cup chopped onion
    1 cup vegetable broth
    2 tbs olive oil
    4 tsp soy sauce
    1 cup/8oz tempeh
    1 tbs fresh sage
    1 tbs fresh thyme
    1/2 tsp ground nutmeg
    salt and pepper to taste


Of course, I donít want to stop eating this so the portion size is generous. If you cut down to 8 servings it is around 415 calories per serving. I cannot remember where I got this recipe. It was not on Spark People, but I apologize in advance if it is similar or exactly like someone elseís. I am really just entering it here for my own future calorie reference. Thanks!


Preheat oven to 350. Sautee tempeh, onions and carrots in olive oil until onions are translucent. Add soy sauce, broth, peas, corn, thyme, sage, salt, pepper and potatoes. Simmer until potatoes are well cooked and most of liquid has bubbled away. Spoon mixture into a 9X13 casserole dish. (If the mixture is too watery add a cornstarch slurry to thicken and simmer an additional 5 minutes). Mash yams and mix with butter and nutmeg. Spoon over top and spread evenly over mixture and bake for 30 minutes or until bubbly.
