Introduction

A filling soup without a lot of calories. A filling soup without a lot of calories.

Ingredients

    3 bags coleslaw mix
    4 med. potatoes, cubed
    1 onion
    3 Bay leaves
    1 lg can of diced tomatoes
    4 Tbsp. powdered chicken OXO
    Fresh or frozen dill weed
    Splenda
    Vinegar
    Salt and Pepper

Directions

Peel and cube potatoes. Chop onion. Place potatoes, onion and bay leaves in a large pot and cover well with water. Bring to a boil and let it simmer for 5 minutes. Add OXO, fresh dill and coleslaw mix. The pot may be too full to put a lid on it. Let it boil for a few minutes until the cabbage has cooked down a bit. Then cover with the lid and let it simmer for 20 minutes. Add a can of diced tomatoes and bring to a boil and removed from stove. Add equal amounts of Splenda and Vinegar as well as salt and pepper to your preference.
