Number of Servings: 12


    *Cloves, whole, 8
    *Onion - Medium Whole, peeled, 1
    Peppercorn, 20
    Nutmeg, ground, 2 tsp
    *Bay Leaf - whole leaf, 2
    Allspice, whole, 10
    Evaporated milk, non-fat, 370ml (1 can)
    Milk, nonfat, to make up to 600 ml
    White Bread, 1 cup, crumbs


You can stick the cloves in the onion if wished, but it works just as well with them loose. Or you can use freeze-dried onions, about 2 tbsp. The nutmeg should be grated fresh.


Put water in the bottom part of a double boiler, and bring it to the boil. Meanwhile, place everything else except the breadcrumbs into the top part. Simmer for about 1 hour, covered. Remove the top part and replenish the water in the bottom part with boiling water, if needed. Strain the milk and place it back in the top part. Add the breadcrumbs and stir. Simmer for another hour, covered, stirring occasionally.
