    3/4 c sugar
    1 1/2 c mashed bananas (3 large)
    3/4 c vegetable oil
    2 eggs
    2 c all purpose flour
    1/2 c chopped nuts
    1 t baking soda
    2 t vanilla
    1/2 t baking powder
    1/2 t salt
    1/2 t nutmeg


Heat oven to 325'
Place cupcake liners in a pan that will hold 12 cupcakes
Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon
Stir in rest of ingredients
Place in pan liners and bake for 25 minutes

*as a variation, I also replace 1/2 cup of bananas with 1/2 cup of berries (raspberries work real well)

This recipe is a basic one. Obviously, you can replace sugar sub for sugar, egg sub for eggs and applesuace for oil. Nuts can be of a different variety.
