    1 pound chicken thighs
    2 cups chicken gizzards
    1.5 cup fresh parsley
    1 medium onion chopped or diced
    3 cups celery chopped
    3 cups carrots chopped
    salt and pepper to taste
    1-16oz. box elbow macaroni


Put water in large pot, add thighs and gizzards. Bring to a boil. After meat has cooked, then you can add the onion, parsley, carrots and celery. Add salt and pepper( we usually add salt and pepper to taste). Cook on medium heat until all vegetables are tender. The longer the soup cooks the better the flavor.
Cook pasta in separate pot. Drain and add to individual servings if desire.
