    16 oz. 93% lean ground beef
    16 oz. frozen corn, thawed
    15 oz. can diced tomatoes
    15 oz. can dark red kidney beans, rinsed and drained
    4 oz. can diced chili peppers (we prefer hot!)
    3/4 cup whole wheat elbow macaroni
    2 tsp. chili powder
    1 cup water
    1/2 cup shredded Mexican cheese


In a large skillet, brown ground beef. Drain. Add remaining ingredients except cheese. Bring to a boil. Reduce heat to a simmer, cover, and cook 15 minutes or until pasta is tender. Sprinkle with cheese and let stand 5 minutes.
