Ingredients

2 lb pork roast
4 medium potatoes, bite sized cubes (yukons are my fave)
1 cup baby carrots (cut in 1/2)
1 medium onion, cut into bite sized chunks
sprinkle of black pepper & salt (over veggies)
1 small clove garlic, cut into slivers
Rub:
Steak seasoning, 2 tsps
ground black pepper, 1/2 tsp
salt, 1/4 tsp
garlic salt (or powder), 1/4 tsp
meat tenderizer, 2 tsps
Directions
Prepare veggies and layer them in the crockpot, beginning with potatoes, then carrots and lastly onion. Sprinkle with s & p.
In a small bowl mix together rub ings.
Cut small slits in roast...2 or 3 on all sides of roast. Put a sliver of garlic into each slit. Sprinkle on the rub mixture and...rub it into roast.
Place on top of veggies in crockpot. Add 1 cup of water to keep veggies moist and to make a great gravy (to go over veggies and meat before serving). Cover and cook on low for 8 to 10 hrs.
Roast will be so tender it will fall apart. Remove roast to a serving dish and remove veggies with a slotted spoon. Super good as left overs too...try it in a great stuffed burrito!
