Ingredients

1 cup nonfat refried beans
1/3 cup Birdseye Ultimate southwest vegetable blend
6 Tbl Trader Joe's Cowboy Caviar Salsa
1 cup tap water
2/3 cup yellow cornmeal
1 Tbl chili powder
2 dashes garlic salt
1 Tbl Smart Balance Buttery Spread light
2 Tbl Lite Sharp Irish Cheddar shredded

Directions
Preheat oven to 400 degrees.
Spray one small bread loaf pan or 2 small casserole dishes with cooking oil.
For bean filling bring beans and vegetables, and salsa to simmer stirring constantly.
In a separate sauce pan. Make cornmeal crust.
Mix water,cornmeal, chili powder, garlic salt, and margarine . Bring to boil and stir until thickened to paste.
Spread cornmeal on bottom and sides of pan. leave a few tablespoons.
Fill center with bean mixture and top with a few dollups or cornmeal.
Bake at 350 for 30 minutes.
Top with shredded cheese and let cool slightly before serving.
